The indirect wood fired oven we construct consists of two chambers; the fire chamber and the cooking chamber. The fire chamber, which is located on the bottom half of the oven, is constructed with firebricks on its base for better heat accumulation. Here is where the fire is lit with woods. The cooking chamber is located on the upper half of the oven and right above the fire chamber. It consists of a 2mm thick stainless steel vault which isn’t only coated with a thin layer of sheet iron. This way, the food takes a very unique taste and color. The base of the chamber is constructed with 4cm thick fire plates. Underneath the fire plates, there is a 3cm-thick layer of firesand so we have a gradual temperature drop during cooking without adding extra woods to strengthen the fire.
One cooking tray at a time or 5kg bread in a bread pan or cooking tray. Ideal for dishes that take 1,5-2 hours to cook.
