This spit-roast recipe is for those who like pork spit-roast and chili flakes, both sweet and hot. Chili flakes are the main spice in our recipe; in combination with a few other spices and herbs, they will enhance the flavor of our spit-roast. We will also brush the spit-roast with a mixture of oil, garlic, and turmeric to give it a wonderful aroma. Let’s see the whole process step-by-step, from marinating to the cooking process.
For the oil mixture:
Debone the chops and cut the meat into small pieces for skewering on the small spits. If you want to use the large rod, cut it into larger pieces. Prepare the spice blend using a mortar and pestle. Firstly, prepare a mixture of sweet and hot chili flakes at a ratio of 3 to 1. This mixture has more than one use. You can even put it on your table along with salt and pepper if you like your food a little bit spicy. Place the chili flakes (3 g of the mixture for 1.5 kg of meat) and the mustard seeds in a mortar. Bash them well before you add the salt and the herbs.
Add the spice blend to the pieces of meat gradually while mixing. Lastly, add the sunflower oil (refer to the video above for further detail). Leave the meat to marinate for three hours or longer.
Before skewering the meat, light the charcoal grill. Pile up the charcoals inside the fire cabin of your charcoal grill. Place kindling (alcohol-soaked cotton) on top and light them. The charcoals will be lit easily, quickly, and without smoke. When they are fully lit, spread them inside the fire cabin. If the pieces of meat are small, start with high heat. Grilling on rotation makes a difference. In the middle of the cooking process, brush the spit-roast with the mixture of sunflower oil, garlic, and turmeric (prepare this mixture one day prior to cooking). Repeat this step 2-3 times before you remove the spit-roast from the grill. When the internal temperature reaches 75⁰C (167⁰F), remove the skewers from the grill. Let the roast rest for 6-7 minutes before cutting into it.
